Do we have to activate MFA in Shared Mailboxes?

And how about users that have AccountEnabled = False?
Such as Shared Mailboxes for instance.

I'd think not; by design these aren't users - you can't sign in direclty as a shared mailbox, only access them via a separate authenticated user.
